Mama Skinner's Homeade Refried Beans

I am just adding all the random recipes I have laying around the house. I made these on Sunday with the Honey Lime Enchiladas that Brig loves. I will post that one too.

3 c. dried pinto beans
2 T minced garlic
5 t salt
2 t pepper
half peeled onion

Soak just beans overnight in about 8 cups of water. Take out 2 cups of the water and add the remaining ingredients in the crock pot. Cook for 8 hours on low. Take out onion and throw away and drain the water from the beans, but save it. Mash beans with potato masher than add back as much water as you like. They are low in fat without lard and so yummy. For spice, add a jalapeno and then take it out like you did the onion.

Stellar Manicotti

Another one from Chels. This one has been tried and tested and is so good...


8 oz. Manicotti shells

1/2 c. parmesean cheese
15 oz. of ricotta
1 egg
1 teaspoon garlic salt
1/2 teaspoon salt
1/4 teaspoon pepper

26 oz. spaghetti sauce
shredded cheese

Cook shells according to package. Mix 6 ingredients (parmasean cheese to pepper) together in bowl and stuff in shells by hand. Put in 9x13 pan and then add spaghetti sauce and as much shredded cheese as you wish on top. Cover and bake at 350 for 35 minutes.

Taco Soup

1.5 Pounds Hamburger

1 Med Onion

1 Can Kidney Beans

1 Can Chili Beans

1 Small Bag of Frozen Corn

1 Can Rotel Tomatoes

1 can Diced Tomatoes

1 Can Green Chilies

1 Pkg. Ranch Dressing Mix

1 Pkg. Taco Seasoning Mix

1.5 Cup Water

Brown hamburger and onion. Add remaining ingredients and simmer 2 hours. (I put it in the crockpot on low for 8-10 hours, instead of simmering.)
